Beer cheese seems to be trending these days. I don't have many examples right now but I know I've seen it at a few restaurants recently. It was only a matter of time before kraft or whoever jumped on the bandwagon.

BEER CHEESE SOUP

1/2 cup butter or margarine
1/2 cup minced onion
2/3 cup flour
1 tsp dry mustard
1 tsp paprika
1/8 tsp ground cayenne pepper
1 tsp salt
1 (10 3/4 oz) can chicken broth
4 cups milk
1 (12 oz) can beer
3 cups finely shredded sharp cheddar cheese (12 oz)
Popcorn (for garnish)

Melt butter in large kettle; sauté onion until soft.

Blend in flour and seasonings; gradually stir in broth, milk and beer. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir 1 minute.

Stir in cheese, heat and stir until smooth.

TO SERVE:
Ladle into soup cups or bowls. Garnish with popcorn
