Olive oil in the states tastes NOTHING like actual, real olive oil bought in Europe. The difference is astounding. American olive oil tastes like fucking nothing, italian olive oil has real flavor. Chances are high he was adding imported olive oil.

so, whenever I make pizza dough (with bread flour), my dough never doubles in size. I think the water I use is too hot and it kills the yeast. Can somebody give me a good rule of thumb for water heat?

Also, if I put my pizza dough in a bowl, do I need to cover tightly with plastic wrap or is a towel enough?
