Hey pros,
I'm getting one of these.
Either chosera or shapton glass.
Can't decide.
Thinking that the shapton glass is the way to go (not really concerned about "feel" since it's not lose stones).

Would really appreciate educated replies, but I expect and understand the hate that is going to come from buying a sharpening system instead of being zen about it and doing it freehand.
(I know how to freehand; it doesn't bring me pleasure and I can use this at work for the knives there)

I'm sure it works fine, and i'm happy for you, but.. I can honestly say thats the most convoluted, unnecessarily complicated looking shit ever designed to do one simple task.
I really hate those 'one hit wonders' in the kitchen that can only do one specific thing. I don't got the counterspace for that bullshit

They're pretty sweet. Had one at a restaurant that I worked at 12 years ago, so I'm familiar with the system. It's not complicated and it completely fool proof.
I've seen other systems that are similar, but they just aren't as good. My dad has a knock-off version and it's pretty lame.
For me, it's absolutely worth the $350 especially considering the range of stones included. The stones are smaller, so they won't last as long... but they're cheaper to replace.

I have a knock off and the better stones. Works perfectly well. Once you use these you won't go back to freehanding it. They are capable of getting a clean, consistent edge on the ENTIRE blade. Which none of these samurai dick boy wannabes can do. Plus you can tune in your prefererred pitches on your blades also. Completely worth the money

I have one with the glass. Can't tell you about the chosera. I will say that the glass are good. 500 dishes as you might expect, but the 1k and 4k haven't perceptibly changed. I've used it on about 15 knives so far. I still freehand for smaller carbon knives and my single-bevel knives because there is no benefit there, but it's a godsend on big stainless steel knives.

Ignoer the "muh munnys worth" idiot raging about complexity, it takes less time to set up one of these and start sharpening than it does to soak my bench stones. I mean I guess I could replace all my bench stones with glass and then it would solve the issue, but I doubt people who whine about one hit wonders can think that far ahead.

I'm interested in becoming a professional knife sharpener.

I was wondering if anyone could recommend any university courses in knife sharpening.
If anyone here sharpens knives, what's the industry like?
How long did it take you to become a master sharpener?
Are there some must read text books I should get before going to uni?

Gonna order the system with the shapton glass when I get to work.
Weighing the shapton vs. chosera.... I mean, really... I could use the standard stones that come with the system and probably not notice the difference.
