Hey guys, I got some frozen ground venison from a friend in Wisconsin last fall (I don't hunt). I've had it in my freezer and forgot about it. Does anyone have any experience cooking with venison? All he told me was mix it with either ground beef or pork to get rid of the gamey taste.

That recipe looks good, I'd make sure to use Mexican oregano with it or any chili really. It's somewhat different in flavor then the standard Mediterranean oregano most folk here in the states are used to.

A masa harina slurry is nice also near the end of the cooking process.

You don't really need to add either pork or beef. If you make sausage with it, you may want to add some fat, it can be very dry. Deer jerky is fantastic as are the steaks.
