You seem to be missing his point.

His claim is that if you use a bagel to make an "egg in a basket" then you have no extra piece of bread/bagel to sop up the yolk with. Because the bagel already has a hole in it you don't need to cut anything out before you add the egg.

On the other hand, if you take a piece of bread, cut a hole in it and put your egg in the hole you now have an EXTRA piece of bread--the round part you cut out in order to make the hole--which you can then use to dip in the yolk.

You can use any vanilla ice cream recipe as a base and get good results. This is a standard one:

Ingredients
1 cup cream
1 cup milk
1/3 cup sugar
1 teaspoon vanilla
blue food coloring until it looks right
sea salt until it tastes right

Mix the first four ingredients well. Then add your salt, being careful to add just a little at a time (1/8th tsp is a good increment) and not being afraid to taste it freely until it works. Make a note of how much it took to get it the way you want for future reference. Color the mixture, then process it in an ice cream maker.

(I usually use a custard vanilla recipe instead, but the yolks make the color come out green.)
