Slowcooking a whole chicken tomorrow. Never done it before... anyone have any recipes/tips?

put some tarragon+butter inside the skin. all around. It'll keep the insinde moist.

Turn on oven to 400
Wash and dry bird, stuff with lemon, onion, and rosemary
Lift breast skin and put more fresh herbs there. Skip if you only have dry shit
Rub with duck fat (or butter since you probably don't have this)
Truss
Put in cast iron skillet, perched on top of a quartered onion, half a lemon, and the giblets
Pour in a cup of wine and a cup of homemade stock. No stock? Well then water, but none of that store bought crap that tastes like metal.
Stick in oven for 30 minutes
Turn up to 425 for 20 minutes
Turn off oven, take out 20 minutes later
Transfer bird to cutting board to let rest for at least 15 min before carving
Remove giblets, etc from pan
Put on low heat and add 2-3 teaspoons of flour. Stir until smooth
Carve bird
Serve with carrots and peas
Pour wine
Nom

YouTube for trussing and carving. You won't be perfect the first time, but it will soon be very easy

always remember to SAVE THE BONES, SAVE EVERYTHING, and if you dont make a stock the next day then please ATLEAST make a fucking soup with the bones/leftovers.

Or skip all that fancy crap and salt and pepper the bird, slather it in oil or butter, and slap that bad boy in a preheated 375 degree oven for 60-70 minutes. Just like Grandma did it.
