/ck/ Can you give me some good recipes for macarons? I keep fucking up. I made italian macarons today, and my shells ended up cracked with no feet. Any tips? Also does anyone have a chefsteps recipe for it?

How long did you let them sit before baking? It seems to make a significant difference for me.

let them sit out 1/2 an hour, try using a bit lower heat. did they spread when you baked them at all? it really just sounds like they're too high.

Well since it was italian macarons I didn't feel a need to let them sit out. And no they didn't spread, they rose but ended up cracking.

The reason you let them sit out is so a shell forms, preventing air from escaping from the top, like it does in breads or cakes. Instead the air escapes from the bottom around the edges, creating the feet.

Thanks! I actually re did them any them came out alright! Some had cracks others didn't but that's attributed to the oven running crazy

I haven't taken the chefsteps class, but the ONE time I made them I use foodwishes and they turned out fine.
The feet were fine (not great). That pics feet are non-existent. And the heads are flat. Probably too wet, but I'm no expert.
