I'm experimenting making cream soda. I made the simple syrup with vanilla and that seemed to work fine.

I don't have any carbonated water at the moment so I mixed a bit with plain water and it was absolutely foul, I had to spit it out.

I've heard that the carbonation will balance the sweetness out and it will be fine using that - is that right? Or have I messed up the syrup somehow?

yeah without the acid from carbonation i doubt you'll get anywhere close to the true flavor profile.

then again, you might have messed up the syrup.

only way to know for sure is to try it carbonated.

Mix in a little bicarb. It won't be very fizzy, but you should get some of the acid flavour and saltiness. You might have to provide some additional acid for it to react with in the form of dark sugar or syrup.

Did it 10 or more years ago with rootbeer, it was okay but not as good as virgils or other high end products. Was made from a concentrate so your mileage may vary.
