Soft center all the way. I've actually eaten one. Ordered one for the whole table and noone wanted, so I was forced to eat it whole. Recommended condiment is balls of steel, a stiff upper lip and not breathing through your nose.
All joking aside, these WILL whoop your ass. I recommend to douse them liberally in soy sauce or chili vinegar. The outside (crystallized egg white) is actually kind of nice, but the yolk... oh my god....

It's a kind of a specialty. Any asian supermarket should have some (chinese and vietnamese shops usually do). They're cheap. Depends on where you buy, but shouldn't be more than $3 apiece.

Out of curiosity, do most people eat the boxed ones in Asian countries as well? Because I know they used to come still wrapped in the bark or whatever, and you had to scrape it off to get to the egg. The boxes ones already have the bark stuff removed.

There's nothing weird about century eggs.

You can preserve an egg with 3 things, salt, acid, or base.

Salted eggs, for example, chinese salted duck eggs, delicious as fuck.

Acid preserved eggs are the pickled eggs you have in bars and southern restaurants.

And then you have the base preserved egg, or the century eggs. They are preserved by encased in high alkaline environment.

It's certainly an acquired taste. I thought it was disgusting when I was 4, but later learned to appreciate it. For beginners, slice an egg into 8 pieces and serve it with some thinly-sliced pickled ginger. It's actually very savoury that way. Another good way to eat it is to have it diced small and mixed into some hot congee. It's similar to using fermented krill paste in your cooking- it adds a very deep flavour. Bonus points if you have some salted egg to mix into the congee/porridge. Hamburger americans don't know any better so don't let them talk you out of it.
