I have to cook a stir fry for my vegetarian guests in a few days.
I've never cooked a vegetarian meal. In likely going to use noodles and assorted mixed vegetables ... carrot, broccoli maybe beans. I just need to decide on a flavor.

Anyone have a decent 'play it safe' vegetarian stir fry recipe?

Stir fry is endlessly changeable...

Rice noodles or jasmine rice at the bottom of the plate.

For veggies I tend to go onions, garlic, carrots, bell peppers, baby bok chow, snap peas (also called snow peas), celery... bean sprouts if I want to bulk it up.

Sweet and spicy thai sauce or peanut sauce depending on the mood.

Tofu or nuts if I want more protein..

Okay so I did a test run. Here are some things I learnt.

Dont underestimate the vegetables you will need. When you're chopping them up it might look like too much and you'll stop. In my case I stopped and ended up with too few vegetables.

If you're boiling your noodles don't cook them too long, remember you still have to stir fry them. My noodles turned out a little bit over done.

I made my own Thai chilli sauce and fucked it up. Not enough sweet and too much bitter. Easily fixed for next time. All in all though it still tasted good and I will be improving on this.
