What seasonings, if any, do you put in scrambled eggs? Looking for some ideas since plain eggs with salt and pepper are getting boring.

Try adding soy sauce and sugar. Just a tablespoon of each for 2-3 eggs. Cook them a little wet and serve over rice.

I know what you mean, but that's why I said to just use a little. Just a little only. Ketchup smells nasty to me, but I like the vinegary taste, which is strong, so with such a light flavor of egg it is better to use just a very little ketchup to get some tang and sweet taste.

I know for some people this is a disgusting idea, but it's really NOT terrible for the flavor mix.

>> No.6282854

>>6282827
This. For the most part I hate ketchup, but I do like a very tiny amount with eggs and some kind of carb (rice, potato, whatever). It has to be small enough to provide an accent, rather than to just taste like ketchup. It's good because if you use a small enough amout it provides a hint of sweetness to a dish without being too sweet.

Balsamic vinegar.

>> No.6283304

If you cook with butter, use a low-med heat, but add a dallop of quality cream cheese of your choosing. Ya won't regret it. It makes the eggs fluffier.

Garnish with whatever else these guys said.

And during the scrambling process, take it off the heat source jut a bit before it's fully cooked. Like pasta, it will be hot enough to continue cooking until it cools down to a certain temp. As much as possible you don't want to over cook it, even for a minute. Not like it ruins the whole thing, but you deff will taste and feel a difference.

You know how steak fanatics always say to cook a steak medium, medium rare? Kinda the same for scrambled eggs, tho personal preference overrules everything.

>> No.6283581

Used to eat this for breakfast when I lived in Africa- eggs beaten, salted, and splashed with something that I guess was baking powder to make it fluffy.

They were fried with green onion and sometimes green pepper. Then placed on a piece of sweet bread and Laughing cow cheese was spread on them. Best fucking egg sandwich of my life and only cost 2 bucks for a whole loaf size sandwich.

It was sweet, creamy, and salty with some sour notes from the cheese spread.

>Crack eggs in a bowl
>add a cup or two of milk depending on amount of eggs, at least a 1:1 ratio
>sprinkle in a bit of salt
>add fresh ground pepper
>a bit of basil is nice.

Butter, hot pan, toss that shit in there and cook until the eggs start to form solid masses, then start stirring and stir continuously. The mizture will be very soupy and liquid, you will be thinking holy shit this is bullshit. Keep stirring and cooking gently. Eventually the eggs will cook entirely into soft, solid masses surrounded by now-egg-flavoured milk, they sort of boil or poach in the milk. Cook until the milk is evaporated to the degree you desire (I like keeping the milk intact for toast dipping).

Serve eggs on plate with nice wheat toast and the milk sauce on the side, or over the eggs/toast if preferred (it is very thin, can be thickened if you wish but it tastes fucking amazing.) Maybe a little extra sprinkle of salt on top.
