Where can I find a good, reliable recipe for *sweet* teriyaki sauce? Everything seems way too salty or bland.

There's a tad more to it than that.

6:4*:2-3:1**:1*** by volume soy sauce:some form of sugar*:grated ginger:mirin**:sake***.
Combine everything but the alcohol.
Cook, stirring constantly, until sugar* is dissolved.
Cook just a little longer until thick.
Pull away from the heat and stir in the mirin**.
Put back to the heat and cook, stirring constantly, about 30-60 seconds.
Turn off the heat and stir in the sake***.
Keep stirring until the bubbling stops.
There you go. This is my aunt's recipe. She's a Nipnong.

>* you can use white sugar, brown sugar, honey or even apple concentrate reduction (did that once for cedar plank teriyaki salmon and it was pretty damned good); pretty much, if it's sweet, it'll likely work out well

Oh, and that's 2-3 parts grated ginger. If I happen to grate just a little too much, I'll just use it all, anyway. You can also pound the ginger or mince it and blitz it smooth with a bit of the soy sauce in a blender.

I have no idea why this asshole wants you to make shitty teriyaki sauce but your ginger ratio is way too high, the mirin needs to be increased by 40% the sake needs to be reduced by 20% and you need to divine the soy by a 3.5:1:1 ratio of dark to light to mushroom.

I dunno, Anon, my Nipnong aunt always called it 'salsa tare' (tare sauce; she spoke the local language to facilitate conversation) and the grilled foods glazed with it 'teriyaki.' You know. Because 'yaki' means 'grilled.'
