but they are harder to make.
Scrabled eggs take some time, yes, but you can throw the pan in wash instantly and get the shit out.

poached egg turns entire pot into white mess needs sto be drained and fished out and dried.

Its prolly coz me a shit. How to do poach eggs so it stays nice and in one piece when put in water. Ive tried every recepie and kept doing poached eggs for 2 weeks nothing worked.

Poached eggs hack:

Cover lip of cup with cling film (saran wrap), forming shallow dimple over cup.

Pour tiny amount of butter/ oil/ salt/ pepper into dimple.

Crack egg into dimple.

Bring up sides of cling film, from edge of cup, and twist around, sealing the egg.

Poach egg in cling film.

Delicious, perfect, poached eggs with no waste or fuss.

Having young eggs, the water not bubbling and barely moving, and tipping the egg out of a small cup help. Vinegar probably, I've never experimented without it.

How do you do your scrambled eggs?

Generally I crack 3-4 eggs in a bowl, pour a bit of milk in (to get fluffy), and a few dashes of hot sauce (for a bit of extra flavour). Then I throw that in a hot pan, crack some pepper and sea salt on top, and right before they're done I throw some shredded cheese into the mix, and stir it up to get the cheese mixed in. And if I'm feeling extra generous, I'll plate it all and top it with a bit more shredded cheese.

But lately I've been thinking of doing the same as normal, but instead of using milk and shredded cheese, I was thinking of cracking the eggs into the bowl, hot sauce, and adding cottage cheese and chives into the bowl. I feel the liquidity of the cottage cheese will act like milk, and the cheese is already cheese enough it'll heat up with the eggs, and be nice and melty. Plus the chives give it a bit of an extra zing.

Opinions? Suggestions?

Somewhat related: Pan scrapers. These things are the absolute shit for removing egg and other crusty stuff from dishes. They came with a cast iron skillet I bought years ago, which I barely use, unlike these. The time I spend doing dishes has been cut in half by these guitar pick looking fuckers, and they've never needed to be replaced. They also keep my regular dish sponge from getting disgusting with crusty lasagna and scrambled egg and dried cat food and shit. I ga-ron-tee.

Scrambled eggs on toast is total comfort food for me. It's my go-to, fast, comfy as fuck breakfast. Sourdough toast (buttered) and creamy scrambled eggs are heavenly. So simple, so good. I love eggs cooked all sorts of ways; poached, soft boiled, baked, fried over medium, over easy, deviled eggs, scotch eggs, creamed eggs.....but nothing says pure comfort as scrambled eggs and toast. (As long as they are not fucking hard scrambled, then I have to kill someone).

If I'm just doing one for myself, I put a lump of butter in a small pan and crank the heat until it's frothing, then take it off, crack an egg in, and beat it about until it's done. Probably only takes a minute.

>> No.6265068

i like eggs scrambled with veggies, no toast. the more bread i have in my mouth the less egg i taste, and that's pretty lame.

but i do make oatmeal in the morning with an egg scrambled in for dat protein, fat and consistency. add some berries, a little honey and wa la, perfect breakfast to ignite you with energy.

It's true, you can't. Oh sure, you can get a can of something like baked beans labelled "Baked Beans", but it's just not the same.
