Alright. Another edition of "single guy cooking with his cat or some shit". Today's episode is chicken katsu. I got bored. So before we begin I will say this.

Yes my other thread is still up but no, that is about salted mackerel and thus this is a different topic so a different thread. I again hope it is to your standards and is not just shit-posting.


Lets begin this with the main ingredient which is oil. I took some from my deep fryer hoping I wouldn't smoke the hell out of my apartment again. Unfortunately I let a shitty plastic spatula in there and it melted and burned the oil into smoke. Life sucks then you die.

As you can see, I tried to square it off. Cut off the fatty white crap too, it DOESN'T fry down too well really and just makes a whole mess of everything. Personally when making katsu I like brick shapes. Just looks better in general, you'll see later.

Moving on we make more slaw with crab and "what could have been fish". This time I'll explain it better. You use the greener slices instead of the inner ones. The outer greener slices are thicker and make a nice crunch. The inner ones are just shit and the wrong size and shape. This is SUPPOSED to look a bit messy. Again the crab is really just white fish that looks like crab but...fuck it yolo. Rub it between your hands and you'll separate the strings. Get out some flour, some panko FLAKES..not the full size shit and 1 egg. Preferably not jumbo you'll just waste it but what ever.

Flouring is mostly mindless in my opinion. I don't really understand why. The egg washes it off when you drench it. I just do it because "you are supposed to" I guess. This normally has to be done fast but I did it slow to take pictures. Also the flakes absorb moisture at some level and also stick better. They look better for the final product too. You'll see mine doesn't look too fantastic because it was mostly panko "dust" not flakes.

Rub that flour in. You can't re-use the flour for anything so don't be afraid to really rub the shit out of it.

I usually add spices to the flour myself.
Also if you want to make nice thin crust, use just plain flour, no breadcrumbs/panko needed, but that's really preference, I like the breadcrumbs for thicker crust.

Next time use chicken thigh instead of a tender. Remove the bone and butterfly it out. I would cut the cabbage a little finer and put it on the bottom of the plate beneath the katsu. Also, don't cut food you're going to serve raw on a cutting board where you have raw chicken, you're just asking for salmonella.

Fry it up with whatever breading you feel like, get creative. Not even gonna lie I've used dozens of kinds of chips as breading for it but my favorite has been crushed up fruity pebbles, try something you might like surprise the fuck out of us.
