i never have had cottage cheese (well i have, but like a spoonfull of it years ago)
for some reason when ever i attempt to eat it i get a uneasy feeling

It's bland. But try this: put it in a blender with some nutmeg and parmesan.

Once blended, think of it as low fat ricotta. and use it as filling for stuffed shells or a non-bechamel lasagne filling.

I like it plain, but also like it with add-ons. Thousand Island was a staple I learned growing up from my dad.

Now I like Sriracha in it. Black Pepper is alright.

It's extremely mild, in the same way that milk is. It's basically milk with texture, so it takes to anything. Canned fruit, honey, jams, etc go well with it, but so do things like pepper, hot sauce, and spices.
