A taco is a single tortilla folded in half with a filling inside it.

A quesadilla is basically the equivalent of a "grilled cheese sandwhichi" made with tortilla instead of bread. It's thin and cooked after being filled with cheese so that the cheese melts and holds it together.

A burrito is made with a larger tortilla and is folded up to completely enclose the contents, rather than a taco which is simply bent in half.

If you make a burrito and you then fry it you get a chimichanga.
