I use saffron in Indian cuisine, I made a sour berry chicken pulao the other day and used saffron in it, it adds an earthy flavour. I also use it in nimish for the same purpose.

It is expensive by weight, but thats only because they weigh so little. A small vial costs approx £3, I uses that much saffron to make 18 nimish and the chicken pulao which had 1kg of dry rice and 2kgs of chicken in.

There are many foods people eat as a show of wealth/opulence, usually at celebrations, when trying to impress others or just as an indulgence because they can afford them. A bunch of these have been listed in this thread already:

Even though these foods are eaten as a display of wealth that is not the only reason people eat them. People eat them because they have complex flavors (or in the case of shark fin and sea cucumber textures) that are difficult to reproduce in other foods. Their scarcity made them expensive, then the luxury prices they commanded made them symbols of prestige.

But that doesn't make these foods entirely Emperor's New Clothes. I've been to a few parties thrown by wealthy people, and I've had Beluga caviar (in Switzerland), vintage Champagne, dishes with shaved truffle, Grana pardano cheese and foie gras. A short stint in the wine business allowed me to sample some outrageously expensive vintage wines. I have eaten Kobe beef and high end sushi on the company dime in Japan a couple of times. I've eaten at 100+ year old steakhouses in NYC. These things are all delicious. Absolutely fucking delicious. Delicious enough to command the obscene prices they go for? Nofuckingway. A good chunk of the cost is prestige and scarcity. But that makes them no less delicious.
