Because any and all so called fancy mexican chefs are not what its about they are in it for a buck and fame
Its about the food and the people especially the ceremonial treatment

No. Mole Poblano, also known as mole to the rest of the world, has a bittersweet taste, and a smoky one as well. What separates Mexican food to the rest of the other cuisines is the variety of peppers. In Mexican cuisine, the pepper is the main star, and not overwhelming spices you see in indian cuisine

Mexifag here, from Zapopan, Jalisco, and is a beautiful place with almost 0 violence,... also the food is awesome, tortas ahogadas, fritangas, tejuino (based ancient beverage), churros con cajeta, tacos de barbacoa (not the same BBQ sauce that you guys are used to), carne en su jugo, birria, a lot of french/chinese/hipster restaurants, and the most beautiful girls (just google Mujeres de Jalisco or girls from Los Altos de Jalisco ) you are going to get blow away.

>> No.6191029

>>6189769
yes and no, you can see them as somewhat analogous becuase its a dish built around a sauce with a laundry list of ingredients, but the tastes are fairly different(tho moles do have a good hit of spices which thai/malay/indo curries like masaman and rendang have in common)

mexican food has some interesting similarities to south east asian food

in thailand and the philipenes sticky rice is wrapped in bananaleavs and steamed much like tamales are, yucatecan d'zik(salpicon) is a cold meat salad not far off from larb, the proscess of roasting and grinding salsa in a molcajete isnt too different from makeing thai/lao nam phrik...both cultures like lime and chili on fruit and love charcoal grilled corn...alot of mexican soups come with garnish plates similar to how south east asia soups do(both areas tend to put lime, cilantro, onion, and chili on this plate)
