usually i like salty sweets too but for some reason it just doesn't work with the subtle sweetness of fresh bread

i've read it and know the science behind it. taking away the reasons for flavor which is down to personal opinion, giving the dough a slow rise by using only a little yeast and using bread flour gives the gluten enough strength.

Salted white rice isn't really bad, it's just not as good. It tastes like it's trying too hard.
