Chicken Bites

8 chicken tenders, pounded flat and cut in half. (Boneless, skinless chicken breasts work just as well)
6 oz. cream cheese room temperature soft
1 large jalapeño, deveined and deseeded, chopped
8 sliced of bacon, cut in half

Preheat oven to 400 degrees
Take chicken piece, place 1 tsp of cream cheese on top of chicken, place 1/4 tsp jalapeño on top of cream cheese. Roll up chicken piece,wrap halved piece of bacon around chicken, secure with toothpick. Transfer to baking sheet, bake 10 minutes turning halfway through.

Make a few batches of these, they are always the first food to run out.

The antipasto is always a hit at my sisters party.
Fresh Mozzarella, Artichoke hearts, Olives, Hot & Sweet Soppressata, Provolone, Prosciutto, & Marinated Mushrooms. Get a couple of loaves of prosciutto bread to go along with it. Season salt
Beat chicken when rub in season salt put in fridge for 30 mins
In the meantime fry
8 slices of bacon save grease
Sauce
1/4 Cup mustard, 1/3 Cup honey
2TBS Mayonnaise and 2 tsp Minced onion.
Cook chicken in bacon grease 5 mins each side or till brown ... Put in 9 by 13 baking dish
Put sauce on chicken then add mushrooms on top of each chicken breast , crumble bacon on top of mushrooms then put shredded coby / Jack cheese on last
Bake 350 for 30 mins
