Today I learned that there is such a thing as Colorado-style pizza.

Pic related. Look at that crust.

"I'm a local and agree that there is a legitimate "Colorado Style" pizza. Beau Jo's may have invented the term for marketing, but they are certainly far from the only local pizza place to make pizza in this way. Hernando's in Winter Park and several others in Colorado make similarly-made pies."

Would try.
Always thought dish pizza is disgusting because I love a really thin, crispy bottom. And I still like that far better.
However, the deep dish pizza wasn't so bad, so why not try that one, too...

Deep dish does it better, fillings instead of topping ect... but with less bread. unless you made the crust not boring, somehow...

but still... people get thin crust style pizzas for the bread:everything else ratio.

I moved to Colorado almost two years ago. My little town has a Beau Jos. I don't like the pizza at all. There are several local pizza places of varying styles in my little ski town. We awe lucky to have both good deep dish and New York style pizza. And most places will also deliver Ben & Jerrys.

Now I know where the guy at the pizzeria near me learned his trade. That's what he makes. Honestly, it's not all that good; too much crust for too little in the way of toppings, and he doesn't use enough salt in the dough.

Growing up there used to be two Beau Jo's in my city, but they both went out of business 10+ years ago. It's been so long since I've had their pizza I can't remember whether it was especially good or not, but my teenaged self enjoyed it at the time. The point of having the ridiculously oversized crust was so that you could drizzle honey on it once you finished the part with the toppings.
