This is my breakfast/lunch (it's 14:35). Bagel with green pesto, cream cheese, avocado, fresh apple slices and chicken breast.

Lunch was this. Toasted bread with half avocado and 3 piece bacon weave.

can someone suggest me something relatively healthy and what would be considered "cost effective?". Bonus if it's a little spicy and if you can add a type of meat separately if it's a shared with a vegan person.

Root vegetables like carrots and potatoes are really cheap. You can easily make a good, healthy meal with oven baked vegetables (carrots, onions, potatoes, beets).
For spicy, fried rice is always a go-to. You can even use the same vegetables, but fried instead. For this, broccoli, cauliflower and plain white cabbage is also great and cheap. You pretty much can't go wrong with the spices.

Also, soup is always cheap, healthy and filling (can once again be made with the above ingredients).

All u need is vegetables and water...
Cook it until its all tender. Add pasta, or rice, or beans

Alternatively you can cook the meat separately and add it to your soup. But most soups call for braising meats

Green tea and two shortbread cookies (Walkers brand, left over from Christmas). Not pictured: banana, strawberry, and blueberry smoothie which I had already finished before taking this picture.

This has been my daily breakfast for about two weeks. It's nice, but I'll be cutting out the cookies after I finish these holiday treats.

Dude get a miso soup going
$3 pack of pure miso will make you something like 35 serves of broth, just add veges, meat or tofu. As much pepper as you like, it's good.
