Any bakers on /ck/?

I make 14 loaves of bread once a week, and up until now, I've been working with a good, but pretty basic, white bread recipe. I've been wanting to make more than basic bread, though, so I think I might try for a poolish for my batch tomorrow. Here's what I have worked out so far.

Poolish:

2 lb whole wheat flour
2 lb bread flour
7 3/4 c water
1/3 c sugar
3 1/4 tsp active dry yeast

Ferment for 8 hours....

Add:

3 lb 14 oz bread flour
1/3 c salt
6 1/4 c water
2 c oil
a bit more yeast?

Rise, separate into ~1 lb 12 oz loaves, 15 minutes at 425 and 15 more at 375.

Thoughts?

I live on a rural commune and we tend to like doing what we can in-house. Daily bread, among all of our other cooking, falls into that category.

We're officially a secular commune, and we don't have the "charismatic leader" model. It was founded in the late 60s as part of the hippy back-to-the-land movement, and honestly, people here have such disparate opinions about things that I doubt you could ever consider us a cult.

So keep the amount the same for the poolish and add an equal amount after fermentation, or just double the amount in the poolish?

Baking is alot of experimentation and it sounds like you have a good recipe so far...try adding some chopped fresh spinach and feta cheese to a whole wheat bread sometime, it's some of my favorite or a braided Swiss egg bread which is similar to challah bread

You have to serve the lowest common denominator with the bread. The vegans here get all annoyed when they can't eat it.

That being the case, some of the bread makers love throwing in lots of seeds and extra stuff like that. More experimentation is definitely something I'd like to do after I get a good poolish recipe down.

I would just add a little less than twice the amount.

also the longer you let it ferment the less yeast you need so if you go like 12 hours you only need maybe 1/2 a tsp more than what you listed.

I start making the bread around 6:30 pm, and unless I have the dairy shift in the morning (which I don't tomorrow), I prefer not to get up at 6. Thanks for the advice, though. I guess I'll make it 5 1/2 tsp yeast in the poolish and see how it goes.

I'll probably have the poolish made by about 10 am, have the dough made by 7 pm, and get it in the oven around 9:15

I just downloaded Tatami Galaxy. Is it any good? All I've enjoyed so far is FLCL, Bebop, and Death Note. Plenty of movies too though.
