I am a pizza expert. I am here to answer all of your pizza related questions.

My parents own a pizzeria in NYC, which is where I was first introduced to the art. I then went to university in Naples. Although I didn't go to culinary school, I spent that time perfecting my art.

I am now laying low. I'm writing a book on pizza while working at Papa Murphy's.

Every Pizza Hut within 50 miles has closed down where I live. I can get pizza from almost anywhere but there's something special about their personal pan and thin n crispy pizzas. If I'm going to get my fix I'll need to cook myself. I can find copy cat recipes online, but I don't even own a proper pizza pan yet. What cookware would you recommend for perfectly recreating their little pizzas?

My pizza dough is lacking. It's not really dry, but I'm having trouble stretching it without there being any holes in the center, so I have to use a rolling pin to roll it out. This is my recipe

15oz bread flour
2 1/4th tsp yeast
2 tsp olive oil
9 fl oz water
1 tsp salt

And I let it rise for 24 hours in the fridge. It tastes good, but the crust isn't as fluffy or the same texture as the pizza I usually have in restaurants. Any tips on a good recipe?
