Any In-n-Out employees out there? What's the cylindrical thing towards the end of the video? She inserts a screen into it.

I'm assuming it's some kind of first-step in double-frying. Off-camera is the deep friers.

Also, I'm assuming there's some kind of potato peeler in the back of the kitchen and she just put them in the big pot to move them to that station?

Their fries are pretty meh, to be honest, but it's intriguing they still do them this way after all these years. Frozen would be easier, but then they couldn't brag about it, I guess.
