I haven't been cooking long enough to have a good intuition for how much of an ingredient is needed and how wide the error tolerances are, and I'm pretty damn shit at eyeballing volume estimates, so I still use measuring cups. I am OK with this.

People who measure are people who have a dish washer. It's no big deal for them to just put a measuring cup in their fancy ass machine that does everything for them.

When I cook from most recipes, I measure precisely, and also every time when I bake.

When I'm winging a recipe or something I eyeball.

Depends on what I'm making.

If it's normal cooking I start by eyeballing and most importantly taste the food and adjust accordingly. Blindly trusting a recipe for exactness is silly because even the the recipe is from a trusted source the flavors of the ingredients will vary, so there's no point in being precise anyway. Taste is king.

On the other hand if I am baking then I measure by weight using an electronic scale.

I measure if I'm baking or am doing very large scale things at the restaurant because I'm not going to just eyeball 3 gallons. Oh I also measure rice, just by filling up some shit and then putting 2x water in.

sometimes measurement is necessary. not just baking, but pickling and hydrocolloids and shit.

it's also nice to know the proportions in which you're building the flavour of anything so it can be productive to use measurements for that, even if it's unnecessary.

I measure when I bake, or do anything dessertlike (aside from custards, or simple things like phyllo tarts).

Anything else, I'm lucky if I go into it knowing what I'm going to make. Why bother measuring?
