Greetings co/ck/s,

I'm on a quest to taste Ortolan, a small bird that is force fed and drowned in booze before being baked and served whole. Traditionally, people put napkins over their faces while eating because decadence is totally embarrassing and God hates it.

The trouble is, buying, selling, and capturing Ortolan is illegal, so the business of preparing these birds in France is super low-key. Does anyone know of someone I could contact to find a place to eat these cuties? How can I go about finding these birds?

I remember a report about ortolan on German TV -as it is illegal, it can only be served at a "private invitation". You might try an actual cooking board like cheftalk.com where you can talk to many professional chefs from all over the world and shitposting is not tolerated.

well, that is an interesting idea. however, ortolan is used because it's a migratory species, and is therefore able to carry a significant amount of fat on its body. Furthermore, it's not really a good idea to just snatch up wild birds and cook them up due to potential disease. at this point I'm considering raising my own sparrows for fattening and consumption.

nab one of them lil fuckers before they get too nasty. they'll be small and you can throw them on a cycle of an antibiotic and antifungal and call it a day. once you're finished and the lil sucker's cleaned out you're good to go. you could even go a step further and thieve some nestlings, they'd take a little more work but they're still easy to raise. hell, you could grab a couple of neonatal european starlings, they're almost impossible to kill (till you drown them in cognac) and you'd be doing the planet a favor by taking a couple out of the ecosystem
