hey /ck/ i got a kitchen aid food grinder attachment recently for the holidays (yes i know, i'm a pleb, i get it).

any ideas on what i can do with it aside from grinding meat? i've already made various ground meat dishes out of everything red and once-bloody in the house, and i'm at a loss for what to do with it now.

This. Homemade sausages are the fucking tits. Do some research on the percentages of fat to put in them, because it's different to a lot of ground meat. Keep it simple and you'll be blown away.

Thirded. Just don't try to grind AND stuff the sausages at the same time. Plenty of retards do and they get all upset and post bad reviews. First grind, then chill, then attach the plastic tube-thingie, THEN stuff the casings.

When i made sausages we ground the meat just after we finished hacking it off the pig. It was pretty cold cos the pig had been in a chiller and the butchery room was cold. I don't know why you would freeze it. I would have thought that could damage the grinder.

you use cold meat and fat to counteract the heating from all the mechanical pressures being exerted. Heating won't cook the sausage or spoil it but it certainly can change the distribution of fat in the blend and possibly giving you a lower quality end product.

That, and it's also easier to cut semi-frozen meat cleanly. If the meat doesn't cut cleanly it can wrap around the blade rather than getting cut and being pushed through the plate.

Fine nature of an actual grinder is nice for this...Grind up a blend of lamb, veal and pork, and greek spices (lots of fresh marjoram), and get your "gyro" loaf ready for baking in the oven like meatloaf. Slice and griddle (or grill) for crispiness for each serving. Or, wrap the raw meat around flat skewers, or into balls, and grill up front.

Another nice thing to do is make the best sausage you can for wrapping around some scotch eggs. I love them cold or hot. But, protip, these things freeze awesomely for an occasional bar snack beer pairing with a quick microwave nuking, or gentle broil in the oven, and a side of grainy mustard of course!

I love to stuff wontons with ground pork loin, cabbage, mushrooms, green onion, and lots of ginger, chili paste...you might like to add your favorite seasoning, from shrimp to hoisin Anyway, fold up the wrappers two or three different ways, and make a huge batch, plop into soup, steam or do the pot stickers. Asian meatballs are also delicious if you make them firmer and more offal containing. Promode is making your own bao or chewy thicker gyoza wrappers from scratch.
