Question: is this the right place to come and discuss spirits, alcohol, drinks, etc?
I feel this is the only board where this topic could be somewhat related. Also why is there no /al/ board here? You would say that there is not much to discuss about drinks, but I'd say you are wrong. New recipes are invented, we could discuss brands, stories, origins, etc. What's your opinion?

It depends. Jack and Johnny walker red label are the most smoky. Side note: I actually went to small distillery in Scotland and they were using French sherry and Jack casks, which I thought was pretty funny.
Crown Royal tastes more like bourbon to me.
Tulamore Dew is quite sweet. Jameson is good with gingerale.
Personally I prefer more of a rye taste. My fav's are Bushmills, Knob Creek and Canadian Club. Johnny Walker black label is apparently very good, but too rich for my blood.

Not that guy, but Knob Creek is a decent bourbon, it's a little on the mild side, but is very well balanced between being sweet, oaky, and spicy. It's a good option if you want to start to understand the differences that set good liquors apart from bad - it's not particularly 'interesting' to a seasoned bourbon taster, but it's a definite improvement from the more basic liquors you've already tried.

Well Whiskey Distillery of the year for like the last 3 years in the US, has been Four Roses, and I agree, other than anything buy them, Buffalo trace is very good and affordable, and as far as Ryes I like Old Overholdt and Sazerac, though almost always in old fashioneds or Manhattans. Bulleit rye or boubon is also very trendy, the Boubon is made at Four Roses.

I am already making a series of whiskey that I've taken around to a number of distilleries and had the still masters try and I've been getting extremely positive feedback. But as these companies became publicly traded and held the companies started having to listen to share holders and all share holders care about is profit. So they industrialized the process. They made it assembly line... like Mcdonalds. And as such the quality has gone to shit compared to what it could be. Regarding my stuff... I've got ppl favorably comparing what I'm making to Little Mill 20 yr old and Longmorn 15.
The reason being is that I'm trying to go back to multi stage fermenting which is something that you simply do no see any of the big distillers doing... ever, and then aging in small barrels (more surface area to whiskey to age against)
And yes, I'm actually serious about trying to make a craft distillery that revives some old time techniques in a modern setting. Currently I'm working with a stilldragon dash 2 4 inch reflux with 2 plates and a pot still top (all copper) as well as a straight forward all copper alembic to do the stripping and spirit runs for my whiskey. I'll be using the dash 2 with 6-10 plates for vodka with any likelyhood. Should be able to get some really pure nectar off that. But I'm not a big vodka fan.. it's stripped of all flavor and I'm a firm believer that hooch should have taste.

I'm still trying to work it out. Here's the thing, Ingredients and such are not the limiting factor (yeast you get from the process, grain is dirt cheap, as is water, amylase, sugar, etc.) it's the taxes, licensing, and basic red tape. The feds make it fucking HARD to get started. Basically you have to HAVE the place set up, stills in place, insurance in place, security, fire suppression, everything actually bought, paid for and installed before they will even think about granting you your distilling license. which is believe it or not... step one of the process. Once you have the distilling license THEN you can start applying for your labels and bottles to be approved and your recipe to be approved for production. That takes a minimum of 6 months. Seriously. The red tape is just monumental. As to financially sustainable. Oh hell yes. Once you have things running and you are selling it's a virtual printing press. Even with proof gallon tax for feds in the 13.50 range it's still workable to sell in the $30.00 a bottle range

We're going for "Top Hat distillery" We've a logo worked already and some product in 5 gallon new american oak barrels with a heavy char. So technically we could call it bourbon (the definition of bourbon being 51%+ corn in the mash, cask strength barreling, and barreled in new american oak barrels (that's the killer on bourbon, every barrel MUST be a fresh barrel of new american oak... it can never be a preused barrel for anything, even bourbon) And frankly I'd buy my own stuff in a heartbeat. I don't think I've tasted anything on the market like it. Also trying some new things too. Things like infusing whiskey with other flavors naturally, but accelerating the infusing process by putting it under extremely high pressure with nitrous oxide. The super high pressure forces the essential oils in things like coffee, hot chilis, and even chocolate to leech out of the solid into the liquid. Since I'm in Seattle, the coffee infused whiskey has been getting batted around as an interesting local favorite. What's cool is that it comes off as an unsweetened alternative to Kaluha.

Correct. Thujone is considerd "Generally recognized as safe" by the FDA. It's also found in high concentrations in sage oil, which you can just walk into a supermarket and buy. Nobody uses it as a drug because it doesn't do anything.

The only psychoactive compound in Absinthe is the alcohol. And Absinthe is generally a higher proof (% ABV) than most spirits like rum or whisky. Most spirits are about 40% ABV but Absinthe can easily be 70%, sometimes more.

Usually Chileans based their style on Bordeaux when it comes to grapes of that blend, that is they blend a mixture of Cab Sav, Carménère ect, but i'm not sure if that's the case in your pic. Due to the wine laws of Chile, any bottle of wine that states a single varietal on its bottle like yours must be at least 75% of said varietal. If it's just a straight up Merlot it's probably decent, might be a bit lacking in structure and power, and will definitely be very fruity, but it doubt it would be much of a complex wine. Depends on the age, really. If they aren't aged for that long they will still have much of the flavor from the original distillation, e.g. sugarcane flavor in the rum, grapes in the brandy, etc. But the longer they age the more the barrel takes over the taste rather than the original spirit. If they were very old I doubt you'd be able to identify what the original spirit was.

I was served some 30-year old rum once. Tasted almost exactly like brandy.
