Pan sear to rare, a little bit of butter to brown, and then baste. Pan was hot as fuck then turned down. Turned out delicious.

I have a mineral b pan, I usually toss in a light amount of Flaxseed oil and cook it for about 2-3 minutes on both sides with some garlic and butter and right at the very end toss in a bit of soy sauce and hot sauce.
