Combine these two ideas.

5 pork chops are going to run you about $6. A ribeye at a supermarket is going to start around $12. You can have 10 porkchops for the price of one ribeye.

And holy shit are fried pork chops amazing. Hit them with some Cajun seasoning, dredge in flour, fry in some oil. Woooooheeeeeee!

Americans like steak more because it's way cheaper for them. I used to be able to get two tenderloin steaks for like $8 in the states. Now I get the same amount for $15+. I eat steak much less often now.

That said, biting into a perfectly cooked steak is something else. I can feel my entire body relax after that first bite.

Not really. I've experienced a lot of various types of foods throughout my life. I still enjoy having a well prepared steak. I wouldn't exactly call steak the greatest food to ever exist, but I do enjoy it quite a bit.

Is it really good quality though? (I know you don't all eat it with 'steaksauce' and ketchup, but still) The truly memorable steaks that I have eaten I can count on one hand, the last one was bought directly from a farmer in Brittany- a slice of buttery heaven.

Most steak is OK, but very rarely as good as others seem to think.

With the expert knowledge that I've gained from nearly seven minutes on google looking at 'brine' I can confidently advise you that brine is not much more than salt and water (additional spices optional). So not the 'grease' that you're suggesting.

Quick question: do I need to completely cover the pork in brine when soaking over night? Or will the pork act like a sponge and soak it up?
