As an ardent supporter of small businesseses such as Monsanto, the freedom to drink 36 ounce sodas, and unfettered free enterprise as envisioned by the Founding Fathers, I take umbrage at your arbitrary and clearly liberal abuse of this tired, transparent, condescending "fresh ingredients" trope.

Just removing food from the ground is "processing". Water is a chemical. Did you know that cancer and obesity are just genetics? I eat what I want and I feel fine. You clearly are a chemophobe and a science hater if you think that experts haven't been fooled in double blind studies that try to distinguish so-called "garlic powder" from so-called "fresh garlic" (the latter being a foodie hipster fantasy, much like the idea that lobster is not food for poor people).

In conclusion, Chipotle isn't real authentic mexican food, and if they don't earn minimum wage the employer is required to make up the difference.

Convenience and cost.
Sometimes I like to go places outside of home and cook too.
Fresh ingredients don't keep too well in places where there is intermittent/no refrigeration. Ground and/or powdered spices are more compact than fresh, require no special tools to get them ready for cooking, and often cost less than their counterparts. Not to down fresh ingredients-when you can get them they are superior-but in times or places when either the tools, time or cost are barriers to using fresh, ground has its place too.
As they say, half a loaf is better than none at all, and using ground is still better than not spicing your food properly.

Indeed they do. Like I said, not to down fresh-I use them too, and they do taste much better.

But if you don't have a spice grinder, a mortar and pestle, or a bunch of sharp knives to cut them, pre-ground can still work very well. And like I also said above, it's still better than not using those spices at all.

I live literally across the street from a small market. My freezer is pretty much always empty, I got there at noon and buy my lunch, dinner and some snack.

As a real life example, I often use dried herbs when making stocks. While it's true fresh herbs are better, and produce a better product. But I'm not gonna spend $4-5 each time I'm making a batch of stock buying parsley, thyme, and bay leaves. It's much more economical for me to use dried versions of those herbs in this specific application, as they keep much longer allowing me better and more frequent usage.

I buy garlic and ginger because I use them often.

I buy canned tomatoes because using fresh ones can be a huge pain in the ass if I'm just trying to make some sauce.

Everything is fresh, other than using canned tomatoes and consomme when cooking, because in all honesty canned tomatoes are better for slow cooking.
