You stated that this random restaurant in Chicago, Illinois is somehow as Mexican if not more Mexican than food found in California, New Mexico, Arizona, and Texas. PS not all Mexican food in Texas is Tex-Mex or Tejanas grub. I'd wager there's better Mexican in Oklahoma, Nevada, and Louisiana.

Outside of Mexico, Chicago maybe the place that has the most home made tortillas in the US. Plus Chicago has one of the biggest highest Mexican population in the US. Also, You mentioned New Mexico, Arizona and Texas, states infamous with mexican-american. Mexican American didn't really hit big in Chicago so you'll see more food from the motherland such as guaje mole, cemitas, and baja cuisine
