Western food philosophy centers around "complimenting", pairing flavors that are similar in nature (dark, robust wine with red meat, etc.)

Eastern food philosophy centers around contrast, a balanced mixture of bold and contrasting flavors: sweet, savory, spicy, etc.

Which philosophy do you like better.

That's not right.
Complimentary can mean opposing, but it a way that reflects and highlights the good aspects of each other. Look up complimentary colors. They are opposite each other on a color wheel. Red wine with red meat white wine with white meat is an oversimplification of the idea that many wines can overpower many foods.

the thing about pairing dessert wines with chocolate is there are a lot of similar flavors in general, and it can be difficult to evaluate and ensure a balance without doing a tasting.

They're not really mutually exclusive, western food philosophy involves pairing foods by shared aspects of their aroma, chinese food philosophy involves balancing basic tastes sweet/sour/bitter/salty/umami as well as pungency and texture in a complementary way that brings out the best aspects of each item.

In all fairness, it is a difficult thing to put into an image. If you really wanted to get into the nitty gritty of flavor pairing with an image, it would look like a madman's schematic that would have a compendium of footnotes and side notes.

People seem to have a problem with that image, but the pairings are pretty much dead-on in my opinion.

Full disclosure, a choice ribeye from Kroger, a baked potato with sour cream and chives, and the cheapest Cabernet Sauvignon is pretty much my ideal dinner.

Like...I'd rather have that than go to an expensive steakhouse for free. I tell my girlfriend to save her time and money, and just give me $30 for my birthday so I can treat myself.
