I bought 1 awbergina (sp?) A few days ago and it is just starting to get soft.

What can I make with it?

If you can be bothered with frying then try a parmigiana.

Slice the aubergine and then coat in egg and flour and fry.

Make a nice rich tomato sauce with lots of garlic and red wine- spoon it between the layers of auberigine, adding plenty of parmesan as you go. When you've got all the aubergine in, cover with mozarella and stick in the oven.

Its' good hot, but its' GOAT cold the next day- really meaty and satisfying (despite having no meat of course)

off the top of my head:

moussaka, baba ghanouj, eggplant parmigiana, tempura eggplant, ratatouille, baingan bharta (mashed, sometimes smoked curried eggplant), steamed eggplant stuffed with rice a la chinoise, baked eggplant stuffed with meat, tomatoes, peppers and rice a la the rest of civilized aubergine eating society, thai eggplant curry (basil and coconut)... or throw it at your neighbours, they love that shit.
