I'll start with a tip for cleaning pots & pans with burned-on food. If you do a fair amount of pan-searing, stir-frying, or sauteing it's pretty unavoidable.
You can make this easier on yourself by letting the stove or oven do 90% of the work for you.

Just fill the pot or pan and stick it on the stove or in the oven on low heat. Also a good idea to leave you spatula or other utensil there too.

Use the also filthy spatula to scrape the pot/pan while it's hot. Then just move the now hot food-water filled pot/pan to the sink and use a wire brush to get anything that remains.

No cleaning products needed and you can finish cleaning in the sink or put it in the dishwasher.

Heating a pot or pan opens up the texture on its surface, and that texture closes back up when the pan cools. Getting baked-on food off at a temperature lower than that at which it was deposited is more difficult because of this.

you're wasting energy. when you boil water for tea/coffee the morning after cooking, simply add more water to your pot. pour this extra boiling water in your dirty pans. enjoy tea, then clean pans.

I was just gifted a knife set with a wooden block for holding. What's the best thing to do to clean the block before I start storing the knives in it

This and some elbow grease is all you need. If it's burnt on then leave a little water in it for a few minutes it should loosen it up.

I'd suggest plain old soapy water. If you don't have any soap then casually mention that in a conversation with your family and you might get gifted some for Xmas.

It's the gift that keeps on gifting.
