Usually sell by dates are meaningless, with all ambient and freezer they are, air tight will last months or years after, tinned indefinitely. With dairy it's still safe but there's a noticeable quality dip. Same with bread and fresh meat, wouldn't really go more than two days past and still smell it because even in date dairy and meat can be bad.
Processed and cured meat I would still eat a few weeks after as long as it smelled good.
