I have a potentially stupid question: when they list the macros and calories of pumpkin seeds (or any other similar seeds) do they refer to the seed without the shell?

So if I weigh 100 gr of seeds I'm not really eating 100 grams because I don't eat the shell obviously so I'm not getting 49 grams of fat etc. ?

Link to the calories listing you're using?

100 grams of shelled pumpkin seeds has 46 grams of fat...

Just search on google.com "pumpkin seeds calories" brings it up.

Ah, okay

I think google is using this website as a source for that data

http://nutritiondata.self.com/facts/nut-and-seed-products/3141/2

change the setting to 1 oz/85 seeds

check the weight of 85 seeds with versus without shells, then see which one is closer to 1 oz in weight

Without the shell they're obviously lighter by 30-40% tops I'd say. Anyway I've just read on a site that the shell contains mostly carbs and the rest contains those fats and other good nutrients which is good.
