Okay. I'm a thin-crust guy, but I'm not here today to bash your cherished deep-dish.
But I want to know something from the people who prefer pizza casserole to real pizza....

Why is the tomato sauce the top layer?

Wouldn't covering it with some cheese that would get browned taste better?
I'm not saying take away the cheese inside, but what's the benefit to having the tomato sauce exposed to the direct heat?

A thin crust pizza is baked at 500+ degrees for no more than 10 minutes, caramelizing the toppings in the process. Deep dish, on the other hand, is baked for 20+ minutes at ~450 degrees. When you have the tomato sauce on the surface of the pizza the toppings beneath retain most of their moisture. Usually there's a layer of sausage and vegetables above the cheese, further preserving the moisture below.

The cheese protects the dough, the toppings protect the cheese, and the sauce on top should thicken up due to direct exposure to heat. Totally different experience to traditional pizza.

Not all deep dish pizza's are the same, Detroit vs. Chicago.

Second, Chicago is famous for thin crust pizza as well, super crisp crust, not chewy NY style.

Third, I hate that picture, it's crust, cheese and red stuff, I don't know what the red stuff is, this is why so many ignoramus people call it casserole.

In reality, there isn't that much crust, but enough that you do NOT need a fork to eat it, I leave that to the girls. Sometimes there is a top layer of crust, not needed. Mostly, there is a pound or two of meat in that bad boy, mixed with cheese...no sauce.

Sometimes crushed tomato added to the top. This is in place of a sauce, so you get tom's on top.
