When you order a cheese pizza at (generic pizza place), do they put more cheese on it than they would for, say, a pepperoni pizza?

a long fermentation time in the fridge makes dough bubble like that, like use less yeast and let it ferment for 24-48 hours in the fridge

some old school bakers consider the bubbles a defect, but cold fermentation is getting more common

I can understand that impression, but all of those are pepperoni halves. So it may look like there are 24 pepperonis, but there are actually 12 whole ones in total, and I don't put much salt in my dough. But you know what, the whole thing actually is a bit salty, when I think about it. I guess from the olives too. But I really like this topping combination.

Looks great. I see basil pesto, zucchini, onion, pine nuts, oil cured olives. You going to do it just like that? I've done stuff like that on my pizzas, occasionally. I like to sautee the onions first. My favorite combo I found with that was caramelized onion + gorgonzola. Gods. It's a really good pizza topping.
