I bought a tin of mackerel fillets today for 78¢. Never bought tinned mackerels (or any tinned fishes other than tuna, sardines and anchovies) before today, I've never seen such tiny mackerels. The ones I'm used to are about the size of an average banana.

I then also noticed that some of the cheap chickens had $2 off manager's coupons on the packaging cuz they were gonna 'spire today. So I "bought" the two cheapest ones with $2 off coupons. $3.33 + $3.29 - $3.50 - $2.00 - $2.00 = -88¢. The grocer paid me 88¢ to take chicken from them. So I popped'em into the pressure cooker where they're happily turning into chicken stock which will then be turned into chicken stew later tonight. ^_^

tuna is better in pouches sardines are better in cans. It has to do with the cooking process. Tuna in cans gets cooked twice and so is overcooked. In bags it's just vacuum sealed so it doesn't get overcooked. Sardines are cooked and preserved in oil there is no second cooking.

WHO THE FUCK DOES THAT?

The only time I've ever had tuna with mayonnaise is when making veal in tuna sauce, a cold summer dish for where I'm from. You blitz tuna, tinned anchovies, egg yolks, lemon juice and prepared mustard together then add olive oil a little at a time until you make, like, a tuna mayonnaise thingy. Then you serve cold, braised leg of veal that's been thinly sliced and dress it with the sauce, more lemon juice, black pepper and lots of parsley.

I modify the dish by adding caramelised onions to the tuna and stuff before blitzing and adding the olive oil.

And also correct about quality of tinned tuna country to country. I think only Spain beats us for quality of tinned tuna but my favourite is Thai only cuz of what it's packed it, even if the quality isn't as good as ours. You can buy tins of tuna packed in coconut milk, Thai chili paste, roast eggplant paste and green curry (which is my favourite).

It's just infuriating how much smaller their tins are. Ours vary in size between 200-500g, though some go up to 1kg. Thai tuna is sold in 150g tins. :-(

I'm not sure how good or bad tinned tuna might be wherever you are, but pouched tuna just smells and tastes weird to me.

We eat a lot more fish than the French do. We're a peninsula, after all, and few of us live farther than a stone's throw from a beach.
So of course, we take the quality of our fish much more seriously than non-coastal French do.

I'm sure there's some obscure French tinned tuna company that makes the Best Ever™ tinned tuna, but on average, French tuna isn't as good as ours. Don't quite know why.

Colatura is the frozen orange juice concentrate to fish sauces while Asian fish sauce is like fresh-squeezed orange juice and worcestershire sauce is like mulled orange-ade.
When using colatura, you add a drop or two to something. When using fish sauce, you add a tablespoon or two to something. Same with worcestershire, but it carries other flavours and aromas with it.
Each of the three is suited to different things.

I used to get Kroger brand sardines in a blue box. The can itself was completely unmarked. The nicest little fish with good oil. I'd pour a bit of Tabasco in and eat right out of the can.

sometimes, when feeling down and dirty (and alone- farts that can peel wallpaper) I like king oscar sardines on saltine crackers with chopped onion or horse radish. with cheap sherry or bourbon and coke. I sometimes enjoy kraft mac and cheese with two cans (5 oz) tuna and a can of Lima beans,with a beer or three. pic related. its the look I get from the dog. (only two here, you can't blame that on me)

Salmon Casserole.
Just like tuna casserole with cheese, pasta, mayo, peas, celery, & onion. But with Salmon it turns out much more refined tasting.

I made it as a teen by accident as my parents were out of tuna but there were cans of salmon so I figured what the hell, canned fish is canned fish.

All these years later and my mom still loves it when I drop some off at her house.
