Thanks, I usually always get bbq style pork for meat and lately I've been addicted to having the omelette and pork, and besides that there is cilantro, cucumber, pickled carrot mixture, jalapeno and a condiment that I'm uncertain of. I add a bit of siracha if I'm eating it in the restaurant.

Last night's dinner:
Twice fried chicken hearts. Dredged in a hoisin and fish sauce egg wash and tossed with flour spiced with anise. The fried hearts were then tossed in a sauce made from garlic, lime, spring onions, honey, fish sauce and green and red Thai chillies as well as a couple Serrano peppers I had laying around.
It was served on pan dan rice with a light salad made from cucumber, celery and carrots, thinly sliced and splashed with mirin.

I made a poor attempt at plating it.

It was really colourful and fresh tasting. I always like how beefy hickey hearts taste. My only complaint is that I shouldn't have blanched them first, they weren't rubbery but they were kind of tough. I also added a bit too much salt to the dredge.

Overall a solid 8/10 for me.

Basically make a curry paste:

I used galangal, kaffir lime leaves, lemongrass, shallots, garlic, ginger, chilli, turmeric, and coriander

Brown beef shortribs in pan (also works with stewing beef) and remove

Fry up lemongrass and galangal until it smells good, add curry paste, fry a lot of the moisture out

Add coconut milk and mix it tha fuck up.

Then place the beef short ribs back in the pan and bring temp up to a simmer.

Simmer for ~4 hours with lid off, basting or flipping the short ribs every 30 mins or so.

As you do this, the fat from the shortribs and the coconut milk is going to separate from the curry. After 4 hours or so, you'll be left with a lot of oil.

Crank your heat up and fry those short ribs in the oil until the majority of the leftover sauce/oil has been absorbed.

If you have time, leave out to cool, put in fridge, and eat the next day, guaranteed it'll taste 100x better. Serve with rice and fucking enjoy

I think its because of the popularity of this board compared to others. Less posting traffic i guess so no need to make new threads.
