earl grey is my favorite too. I like a drop of cream and rarely a drop or two of honey. I brew it strong and plain when I make a pitcher of iced tea, it makes the best unsweetened iced tea. I usually use the bagged tea for this

When it comes to black tea there is no such thing as too hot. You simply can't steep most back tea unless the water is fresh boiled. Also there is nothing wrong with some tannins in you tea, its part of what gives black tea distinct flavor profile. You can avoid excess of bitterness by not squeezing the teabag or pressing out the leaves. Letting it steep for up to 5 minutes wont hurt it.

Milk and sugar helps to even out the profile into something smooth and refreshing. Although personal I think sugar in tea is for children (except in masala chai with honey). I think a splash of milk is always an improvement for black teas.

Other types of teas like green, white, and red certainly need cooler temps and usually dont need milk and sugar because they already have low tannin count.

Marco Polo - Famous classic with a really strong exotic fruity and floral aroma. Like Christmas Pudding with an Asian kick. If you don't like that sorta thing you will hate it.

Wedding Imperial - A personal favorite that is really rich and chocolaty with bit of burnt caramel aroma. Amazing with rich desserts.

Dimbula - Great as a standard BOP Ceylon from a nice region. Fine grated fannings for more general use, good for breakfast and lunch paired with savory and spicy foods.

We use Ahmad brand Ceylon black tea leaves with just a small quantity of milk. It doesn't taste bitter and makes the best 'English' tea for sipping between mouthfuls of sponge cake.

Rinse out tea pot with boiled water and then fill with a generous spoonful (there's a special spoon that came free with the tea once that is something like the size of a dessert spoon but wider) of leaves for each cup you want. Fill pot with recently boiled water, give it a stir then close lid and cover with tea cozy. Wait 3 minutes, uncover, stir and drain, straining out the leaves into each cup. Add required amount of milk and enjoy.

I'm a britbong who grew up on builder's tea, stewed for ages till you could stand a spoon up in it, milk in it bla bla bla, and I used to think that was the business.

Now I live in Yurop, and the tea here is lighter, less tannic, the blends are different (although often made by britbong firms like Lipton and Horniman etc.). The tea's lighter, and tastes better and after a decade away, I have to say that English blend tea tastes disgusting to me.
