I played it by ear, but here's what I remember.
I browned a few pieces of chicken, cut them up and threw three links of sliced Richard's Andoulle. I then threw my cajun trinity (bell pepper, celery and onion) in to sauté in the grease the sausage sweat out.

While I was sautéing my trinity, I made my roux. I used a cup of bacon grease from some blt's I made earlier with a cup of flour. I cooked the roux on medium heat until it was about Morgan freeman color.

I combined the roux with meat and veggies and added 48 oz of chicken broth. I also added a teaspoon of tony cachere's gumbo file.

Not really a formal recipe, but it's how my dad taught me how to do it for saints and lsu games
