I don't disagree that boiling them makes them soft. However, there is a different between soft and tender. Gelatine is soft. A grilled mushroom cap is tender.
If you prefer soft, by all means, boil your ribs! They might even taste better than mine, depending on what you boil them in/with and how you grill them thereafter. But for me, texture is a big part of my enjoyment of ribs and I don't generally enjoy soft ribs, personally. Not as RIB ribs, anyway. I don't mind them stripped from the bone, pulled into shreds and put into a sandwich, though.
