I recall another Wendy's employee talking about you guys having a set price for adding extra patties and other items to your sandwiches, and that by doing this it's possible to recreate some of your more expensive sandwiches for around half the cost.

Can you tell me more about this?

>> No.5835405

>>5835401
Yes most locations will add bacon, cheese, an extra beef pattie, and other ingredients on your meal for additional costs. You can actually save a lot of money by getting a Double Stacker from the value/dollar menu and paying for bacon and cheese to make a Baconator. You can mix it up with all types of things and save money.

At my location in Pennsylvania dollar amounts for additions go as followed, bacon $1.00, extra cheese $0.90, extra beef pattie anywhere from $1.40-$1.60. It all depends on location, customers dont usually ask to mix up sandwiches so it would depend. I would go with buying it separate and just making it yourself.

Around where I live, Wendy's is one of the better fast food options. Prices are not extraordinary and the burgers actually have some distinguishable meat on them unlike a lot of other fast food places these days.

That's nuts. Is Wendy's the only place that actually mixes ingredients and cooks?
I wonder.
What are the ratios for the recipe for chili?
I'm not asking for the actual recipe, I'm just curious about the ratios.
As in, 10 lbs beef, 1 packet of spice mix, 3 gallons water...
What is the protocol for making chili?

>> No.5835500

>>5835498
Yeah we mix the ingredients and cook it. A lot of people get shocked when I tell them that ha. Uhh the ratios at my location that are used for one batch is usually 6 parts beef, 2 parts seasoning (or a little more like 2.5) and 2 parts water. The protocol is the make a new batch whenever the other one is low or spoiled/not fresh.

And what is Wendy's protocol for shelf life of the chili (that is cooled and not re-heated)? And do you cool down and re-heat chili that has been sitting in the steam table for too long? Is there an integrity clause that Wendy's uses for chili? I mean, if at a certain point (x amount of hours) do you just toss it because of breakdown? Or is it so dialed in that this never happens?

>> No.5835518

>>5835516
We usually do the cool and re-heat process for about 2-3 days before making a new batch. Once a new batch is made, it actually taste better after the first or second day because the seasonings meld together and sit. There is a point of freshness that if passed, we toss it. I and a few other employees know this point of freshness. Also, we cook chili in what we think the customers will buy it as/rate of customers coming in to buy chili. For our location we use 5-7 pounds of beef.

Not OP but I worked at a Wendy's in Ontario for 8 months.

The meat we put in the chili is the patties that are on the standby grill. Once they are dry/too old we throw have a heat well where we store potatoes and chili meat patties

before we made the chili, we'd put roughly 50 4oz patties or 70 2.5oz into a bag and mark it a week from then.

I'd always recommend spicy chicken because it is always the freshest, breaded chicken often went hours at a time without being replaced. hold times are supposed to be 1hr for chicken and 2 for potatoes, but we just judge by feel and looking.

I work at a local bagel shop, owned by a really chill guy that is a great boss AND makes a shitload of money because he knows how to run a business.

We get one free bagel sandwich per shift, but no one actually abides by that. Everyone just kind of munches on whatever they feel like, but no one takes horrible advantage of it because the owner is not a dick and we aren't dicks back to him.

I think there's a balance you have to strike as an owner; if you crack down on that shit then your staff will start to resent you and start to steal shit from you. Sure, you might catch them, but then you fire them and have to train someone knew AND you don't know how much shit they had been stealing from you the whole time. It's probably better to just deal with the small loss of your staff grazing on food and being content with their position rather than being really strict about it.
