Hey /ck/ I don't post here often. I know cheese is an important part of a daily diet and I wanted to know what is the most versatile cheese. Please don't post bad cheeses like pic related.

I especially would like to know a good cheese for use in quesodillas. My girl loves her some quesodillas.

Seriously though, crumble it up and throw it into just about any hot dish with other bold flavors (especially tomato and/or spicy food); it'll mask the pungency of the cheese while overall enhancing the rest of the dish.

Try starting with those generic blue cheese crumbles you can get for salad/at a salad bar. If even that's too strong somehow, try eating a lot of feta for a while then switching to said blue cheese crumbles (not that feta is anything like blue cheese; it's just a cheese that cheese plebs might consider mildly pungent, and thus a good gateway cheese).

After that, start slowly making your way up the delicious blue cheese ladder. As >>5814194 said, gorgonzola is a good mild blue cheese you could move onto after acquiring the initial taste.

The key element in a rachel is swapping the sauerkraut out for cole slaw. The meat can be pastrami OR turkey. If you just make a standard reuben with turkey instead of corned beef or pastrami, it is, in fact, a turkey reuben.
