I just popped 2 lb deer burger into the fridge to defrost. It's a high % of beef fat, like 25% beef fat.

Can I make hoisin sauce meatballs with this? Any other cool recommendations? I've been taking down 2lb of deer sausage at a time with crock pot recipes, but I want to use the burger for something a little more focused.

It's already got onion garlic etc in the burger. I have some panko, would that be fine? I don't work with red meat a lot at all.

how do you prepare them? pan fry?
