Florida-style barbecue.
Unlike other types, it's made sour by heavy use of citrus. Rather than being cold-smoked, it's pseudo-hot-smoked (more 'splain in a minute).
White meats (pork, chicken or firm whitefish) are either soaked in the marinade or baptised in it after cooking.
