I went to the Korean market and got a big cut of pork belly.

What should I do with it?

Well, if you have a smoker, you could make your own bacon. Or, you could roll it, marinate it, and braise it, and make chashu pork to add to your ramen and other noodle dishes. Or, (this is my favorite) you could cut it into 1 1/2 inch cubes, marinate overnight in a mixture of soy sauce, coffee, sake or vermouth, some brown sugar or mirin, star anise (just a bit), black pepper, chili paste, garlic, and ginger, then braise it in the same liquid (adding enough water to the pan to come 3/4 of the way up the sides of the pork belly cubes), then let it sit overnight again in the braising liquid. Once the second marination is done, remove pork from braising liquid, pat dry with paper towels, and deep fry the cubes in rice bran oil until crispy (doesn't take very long). You will have the crispiest, most melt in your mouth, flavorful pork belly ever.

Oh, almost forgot, OR, you could make crispy roasted pork belly with cider cream sauce, which is also great. The anon who posted the Marco video above me is on the right track for that, watch that video. If you want to roast it, you have to do it right to get a good crackling skin. And cider cream sauce is easy, I'm not going to bother telling you how to make it, because you can google a shit load of recipes for that.
